Description

A quick and festive cookie recipe perfect for 4th of July celebrations, featuring soft and chewy textures with colorful sprinkles.


Ingredients

  • 1 box white or vanilla cake mix (15.25 ounces)
  • 2 large eggs, room temperature
  • 1/2 cup neutral oil or 1/2 cup melted unsalted butter, cooled
  • 1 teaspoon vanilla extract
  • 3/4 cup red, white, and blue sprinkles, plus more for topping
  • 1/2 cup red and blue chocolate candies (optional)
  • Pinch of salt (optional, for balance)
  • Parchment paper for baking sheets

Instructions

  1. Preheat the oven to 350°F. Line two baking sheets with parchment paper.
  2. In a large bowl, whisk together eggs, oil or melted butter, and vanilla until smooth.
  3. Sprinkle the cake mix over the bowl and stir until a thick, soft dough forms.
  4. Fold in the sprinkles and chocolate candies if using. Save extra sprinkles for topping.
  5. For puffier cookies, chill the dough for 20 to 30 minutes. Otherwise, scoop about 1.5 tablespoons of dough per cookie and place on the sheets, leaving space between.
  6. Dot the tops with extra sprinkles.
  7. Bake for 9 to 11 minutes until edges are set and tops lose shine.
  8. Cool on the sheet for 3 minutes, then move to a wire rack.
  9. Press extra chocolate candies on top while the cookies are warm if desired.

Notes

These cookies are soft and chewy and stay fresh in an airtight container for up to 4 days. Adding a slice of bread can help maintain moisture.
