- 1 box white or vanilla cake mix (15.25 ounces)
- 2 large eggs, room temperature
- 1/2 cup neutral oil or 1/2 cup melted unsalted butter, cooled
- 1 teaspoon vanilla extract
- 3/4 cup red, white, and blue sprinkles, plus more for topping
- 1/2 cup red and blue chocolate candies (optional)
- Pinch of salt (optional, for balance)
- Parchment paper for baking sheets
Instructions
- Preheat the oven to 350°F. Line two baking sheets with parchment paper.
- In a large bowl, whisk together eggs, oil or melted butter, and vanilla until smooth.
- Sprinkle the cake mix over the bowl and stir until a thick, soft dough forms.
- Fold in the sprinkles and chocolate candies if using. Save extra sprinkles for topping.
- For puffier cookies, chill the dough for 20 to 30 minutes. Otherwise, scoop about 1.5 tablespoons of dough per cookie and place on the sheets, leaving space between.
- Dot the tops with extra sprinkles.
- Bake for 9 to 11 minutes until edges are set and tops lose shine.
- Cool on the sheet for 3 minutes, then move to a wire rack.
- Press extra chocolate candies on top while the cookies are warm if desired.
Notes
These cookies are soft and chewy and stay fresh in an airtight container for up to 4 days. Adding a slice of bread can help maintain moisture.
