Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking sheet by lightly greasing it with olive oil or lining it with parchment paper.
- Wash the zucchini and slice it into rounds or halves.
- In a bowl, toss the zucchini with olive oil, minced garlic, salt, pepper, and Italian herbs if using.
- Spread the seasoned zucchini on the baking sheet in a single layer.
- Roast for about 15 minutes until the zucchini is fork-tender.
- Add the shredded cheese on top and return to the oven for an additional 5-7 minutes until the cheese is melted and bubbly.
