Ingredients

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by lightly greasing it with olive oil or lining it with parchment paper.
  2. Wash the zucchini and slice it into rounds or halves.
  3. In a bowl, toss the zucchini with olive oil, minced garlic, salt, pepper, and Italian herbs if using.
  4. Spread the seasoned zucchini on the baking sheet in a single layer.
  5. Roast for about 15 minutes until the zucchini is fork-tender.
