- 4 chicken breasts
- 1 cup fresh spinach, chopped
- 1 cup cream cheese, softened
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach, softened cream cheese, shredded mozzarella, minced garlic, salt, and pepper. Mix until well combined.
- Using a sharp knife, cut a pocket into each chicken breast, being careful not to slice all the way through.
- Stuff each chicken breast pocket with the spinach and cheese mixture, pressing it inside.
- Add a drizzle of olive oil to a skillet over medium heat. Season the outside of each chicken breast with salt and pepper and sear them for 3-4 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
- Let the chicken rest for a few minutes before serving.
