Description

A comforting dish featuring juicy chicken stuffed with creamy spinach and cheese, perfect for family gatherings.


Ingredients

  • 4 chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach, softened cream cheese, shredded mozzarella, minced garlic, salt, and pepper. Mix until well combined.
  3. Using a sharp knife, cut a pocket into each chicken breast, being careful not to slice all the way through.
  4. Stuff each chicken breast pocket with the spinach and cheese mixture, pressing it inside.
  5. Add a drizzle of olive oil to a skillet over medium heat. Season the outside of each chicken breast with salt and pepper and sear them for 3-4 minutes on each side until golden brown.
  6. Transfer the seared chicken to a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
  7. Let the chicken rest for a few minutes before serving.
