Ingredients

- 1 lb ground lamb or beef
- 1 onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 cup peas
- 2 tablespoons tomato paste
- 1 cup beef or vegetable broth
- 1 teaspoon Worcestershire sauce
- 4 cups mashed potatoes
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley for garnishing (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add the diced onion and carrots, cooking until softened (about 5-7 minutes).
- Stir in minced garlic and cook for about 1 minute until fragrant. Then, add the ground lamb or beef, breaking it up as it browns. Cook until fully browned (about 5-7 minutes).
- Stir in tomato paste, broth, Worcestershire sauce, and peas. Season with salt and pepper. Let it simmer for about 10 minutes.
- Spoon the meat mixture into a baking dish, spreading it evenly. Spread the mashed potatoes over the top to cover completely.
- Bake in the preheated oven for 25-30 minutes or until the mashed potatoes are slightly golden. Garnish with fresh parsley if desired.
Notes
Make this recipe ahead of time and refrigerate before baking for up to a day. Can also be frozen for up to 2 months.
