Description

A warm and comforting Shepherd’s Pie filled with savory ground meat, vegetables, and topped with creamy mashed potatoes.


Ingredients

  • 1 lb ground lamb or beef
  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup peas
  • 2 tablespoons tomato paste
  • 1 cup beef or vegetable broth
  • 1 teaspoon Worcestershire sauce
  • 4 cups mashed potatoes
  • Salt and pepper to taste
  • Olive oil for cooking
  • Fresh parsley for garnishing (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and carrots, cooking until softened (about 5-7 minutes).
  3. Stir in minced garlic and cook for about 1 minute until fragrant. Then, add the ground lamb or beef, breaking it up as it browns. Cook until fully browned (about 5-7 minutes).
  4. Stir in tomato paste, broth, Worcestershire sauce, and peas. Season with salt and pepper. Let it simmer for about 10 minutes.
  5. Spoon the meat mixture into a baking dish, spreading it evenly. Spread the mashed potatoes over the top to cover completely.
  6. Bake in the preheated oven for 25-30 minutes or until the mashed potatoes are slightly golden. Garnish with fresh parsley if desired.

Notes

Make this recipe ahead of time and refrigerate before baking for up to a day. Can also be frozen for up to 2 months.
