Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, add ground chicken, shredded coconut, breadcrumbs, egg, minced garlic, salt, pepper, cilantro, lime juice, and ginger.
- Gently mix the ingredients until well combined, taking care not to overmix.
- Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet, spaced apart.
- Bake for 20 to 25 minutes until cooked through and golden brown on the outside.
- Allow meatballs to cool slightly before serving with dipping sauce or over rice.
