Description

A delightful blend of ground chicken and shredded coconut, these meatballs are perfect for family gatherings or cozy dinners.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup shredded coconut
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1/2 teaspoon ginger, grated

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, add ground chicken, shredded coconut, breadcrumbs, egg, minced garlic, salt, pepper, cilantro, lime juice, and ginger.
  3. Gently mix the ingredients until well combined, taking care not to overmix.
  4. Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet, spaced apart.
