- 2 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 8 ounces fettuccine pasta
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup shredded parmesan cheese
- 1/2 cup diced bell peppers
- 1/2 cup diced onion
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the fettuccine pasta according to package instructions. Drain and set aside.
- Season chicken breasts with Cajun seasoning, then pan-sear in olive oil for 6-7 minutes on each side until golden brown. Let rest before slicing.
- Sauté diced bell peppers, onion, and garlic in the same skillet for 3-4 minutes until tender.
- Add chicken broth and bring to a simmer, then stir in heavy cream and parmesan until smooth. Season with salt and pepper.
- Add fettuccine and sliced chicken to the skillet, tossing to coat.
- Serve hot, garnished with fresh parsley.
Notes
Marinating the chicken in Cajun spices for an hour enhances the flavors. Adjust the spice level according to your taste.
