- 1 pound shrimp, deveined and peeled
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil and sauté garlic in a large skillet over medium heat for about 1 minute until fragrant.
- Add the shrimp and cook for approximately 2-3 minutes on each side until pink and opaque. Remove and set aside.
- In the same skillet, add the cherry tomatoes and spinach. Cook until spinach is wilted and tomatoes are softened.
- Pour in the heavy cream, stirring to combine, and bring to a simmer. Add Parmesan cheese and stir until melted. Season with salt and pepper to taste.
- Gently add cooked shrimp back to the skillet and mix to coat in the creamy sauce. Heat through for 1-2 minutes.
- Serve hot, garnished with fresh basil.
Notes
For best flavor, use fresh shrimp. If using frozen, choose ones with minimal ice crystal formation.
