- 1 lb lean ground beef
- 1 cup cottage cheese
- 1/2 cup Greek yogurt
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 cloves garlic, minced
- 1 onion, diced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add the ground beef and cook until browned, breaking it up as it cooks (about 5-7 minutes).
- Add diced onion and minced garlic, cooking until the onion is translucent (about 3-4 minutes).
- Reduce heat to low, stir in cottage cheese, Greek yogurt, and Italian seasoning until well combined and heated through (about 2-3 minutes).
- Add cooked pasta to the skillet and gently stir to combine.
- Top with shredded cheese, cover, and let sit on low heat until cheese melts.
- Season with salt and pepper to taste, and serve hot garnished with fresh parsley.
