- 4 chicken breasts
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Parmesan cheese for topping
Instructions
- Season the chicken breasts generously with salt and pepper. In a skillet, heat the olive oil over medium heat. Add the chicken breasts and cook them for about 6-7 minutes on each side, until they are fully cooked and golden brown. Once done, remove the chicken from the skillet and set it aside.
- Add the minced garlic and sliced mushrooms to the same skillet. Sauté these ingredients for about 4 minutes, or until the mushrooms soften and develop a nice color.
- Pour in the heavy cream and stir well to mix with the mushrooms and garlic. Bring the mixture to a gentle simmer and watch as it thickens slightly.
- Stir in the fresh spinach and cook for an additional 2-3 minutes, until the spinach has wilted.
- Return the cooked chicken breasts to the skillet and gently coat them in the creamy sauce. Allow it to simmer for another minute.
- Serve the dish hot, generously topped with Parmesan cheese.
