Description

A comforting dish featuring succulent salmon fillets stuffed with a creamy spinach filling, perfect for any dinner occasion.


Ingredients

  • 4 salmon fillets
  • 2 cups fresh spinach
  • 1/2 cup cream cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish lightly with olive oil.
  2. Add the tablespoon of olive oil and minced garlic to a pan over medium heat. Cook until fragrant.
  3. Wilt the fresh spinach in the pan until it reduces in volume.
  4. Combine the cooked spinach, cream cheese, grated Parmesan, lemon juice, salt, and pepper in a mixing bowl. Mix until well blended.
  5. Create pockets in each salmon fillet and stuff with the creamy spinach mixture.
  6. Place the stuffed fillets in the greased baking dish and bake for 15 to 20 minutes.
  7. Remove from the oven, let rest for a couple of minutes, and serve warm.

Notes

For a lighter option, consider using Greek yogurt instead of cream cheese.
