- 4 salmon fillets
- 2 cups fresh spinach
- 1/2 cup cream cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon lemon juice
Instructions
- Preheat your oven to 375°F (190°C). Grease a baking dish lightly with olive oil.
- Add the tablespoon of olive oil and minced garlic to a pan over medium heat. Cook until fragrant.
- Wilt the fresh spinach in the pan until it reduces in volume.
- Combine the cooked spinach, cream cheese, grated Parmesan, lemon juice, salt, and pepper in a mixing bowl. Mix until well blended.
- Create pockets in each salmon fillet and stuff with the creamy spinach mixture.
- Place the stuffed fillets in the greased baking dish and bake for 15 to 20 minutes.
- Remove from the oven, let rest for a couple of minutes, and serve warm.
Notes
For a lighter option, consider using Greek yogurt instead of cream cheese.
