Description

A rich and creamy salmon dish featuring savory garlic, vibrant cherry tomatoes, and fresh spinach, perfect for a comforting meal.


Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh basil for garnish

Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Cook the salmon fillets in the skillet for about 4-5 minutes on each side.
  4. Remove the cooked salmon from the skillet and set aside.
  5. Prepare the sauce by melting butter in the same skillet and adding the minced garlic.
  6. Add the halved cherry tomatoes and spinach to the skillet, stirring gently until the spinach wilts.
  7. Make it creamy by reducing the heat and pouring in the heavy cream, adding Parmesan cheese and Italian seasoning.
  8. Combine the salmon back into the skillet, spooning the sauce over it and warming together for a minute.
  9. Garnish with fresh basil before serving hot.

Notes

For a lighter version, consider using half-and-half or a non-dairy cream alternative. Fresh basil adds a lovely touch of flavor and aroma.
