- 4 salmon fillets
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 tablespoons butter
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups spinach
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Fresh basil for garnish
Instructions
- Season the salmon fillets with salt and pepper on both sides.
- Heat the olive oil in a large skillet over medium-high heat.
- Cook the salmon fillets in the skillet for about 4-5 minutes on each side.
- Remove the cooked salmon from the skillet and set aside.
- Prepare the sauce by melting butter in the same skillet and adding the minced garlic.
- Add the halved cherry tomatoes and spinach to the skillet, stirring gently until the spinach wilts.
- Make it creamy by reducing the heat and pouring in the heavy cream, adding Parmesan cheese and Italian seasoning.
- Combine the salmon back into the skillet, spooning the sauce over it and warming together for a minute.
- Garnish with fresh basil before serving hot.
Notes
For a lighter version, consider using half-and-half or a non-dairy cream alternative. Fresh basil adds a lovely touch of flavor and aroma.
