Description

A rich and creamy salmon dish featuring garlic, spinach, and sun-dried tomatoes that transports you to an Italian paradise.


Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions

  1. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat.
  2. Cook the salmon fillets, seasoned with salt and pepper, for 4-5 minutes on each side.
  3. Remove the salmon from the skillet and set aside on a plate.
  4. Sauté the minced garlic in the remaining butter until fragrant.
  5. Create the sauce by pouring in the heavy cream and bringing it to a gentle simmer.
  6. Add the chopped spinach, sun-dried tomatoes, Italian seasoning, salt, and pepper.
  7. Return the cooked salmon to the skillet, coating it in the creamy sauce.
  8. Serve hot, garnished with freshly grated Parmesan cheese.

Notes

Be careful not to overcook the salmon. Use fresh, firm salmon for best results.
