- 4 salmon fillets
- 2 tablespoons olive oil
- 4 tablespoons butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese, for serving
Instructions
- Heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat.
- Cook the salmon fillets, seasoned with salt and pepper, for 4-5 minutes on each side.
- Remove the salmon from the skillet and set aside on a plate.
- Sauté the minced garlic in the remaining butter until fragrant.
- Create the sauce by pouring in the heavy cream and bringing it to a gentle simmer.
- Add the chopped spinach, sun-dried tomatoes, Italian seasoning, salt, and pepper.
- Return the cooked salmon to the skillet, coating it in the creamy sauce.
- Serve hot, garnished with freshly grated Parmesan cheese.
Notes
Be careful not to overcook the salmon. Use fresh, firm salmon for best results.
