Description

A comforting dish featuring seared chicken breasts in a rich creamy sauce with sun-dried tomatoes and fresh spinach.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 1 cup sun-dried tomatoes, chopped
  • 3 cups fresh spinach
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt and pepper. Cook the chicken for about 6-7 minutes on each side, or until golden brown and cooked through. Once done, remove the chicken from the skillet and set it aside.
  2. In the same skillet, add the minced garlic. Sauté for just 1 minute or until fragrant, stirring constantly to prevent burning.
  3. Add the chopped sun-dried tomatoes and Italian seasoning to the skillet. Pour in the chicken broth and bring the mixture to a simmer, allowing it to cook for a few minutes.
  4. Stir in the heavy cream and let the sauce thicken slightly. Once thickened, add the fresh spinach and cook until wilted, which should take about 2-3 minutes.
  5. Return the chicken to the skillet, coating it generously in the creamy sauce. Cook for another few minutes until heated through. Serve hot, garnished with freshly grated Parmesan cheese.

Notes

Try using organic chicken for better flavor. Great with garlic mashed potatoes or a fresh salad.
