Description

Ingredients

  • 2 salmon fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat. Season the salmon fillets with salt and pepper. Cook for 4-5 minutes on each side until golden and flaky. Remove from the skillet.
  2. In the same skillet, sauté the minced garlic for about 30 seconds until fragrant, being careful not to burn it.
  3. Add the halved cherry tomatoes and cook for a few minutes until softened.
  4. Stir in the spinach and cook until wilted, about 1-2 minutes.
  5. Add the heavy cream and grated Parmesan cheese, stirring until melted and the sauce thickens.
  6. Return the salmon to the skillet, spooning the sauce over it. Heat for an additional 2 minutes.
  7. Garnish with fresh basil and serve warm.
