- 2 salmon fillets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat the olive oil in a skillet over medium heat. Season the salmon fillets with salt and pepper. Cook for 4-5 minutes on each side until golden and flaky. Remove from the skillet.
- In the same skillet, sauté the minced garlic for about 30 seconds until fragrant, being careful not to burn it.
- Add the halved cherry tomatoes and cook for a few minutes until softened.
- Stir in the spinach and cook until wilted, about 1-2 minutes.
- Add the heavy cream and grated Parmesan cheese, stirring until melted and the sauce thickens.
- Return the salmon to the skillet, spooning the sauce over it. Heat for an additional 2 minutes.
- Garnish with fresh basil and serve warm.
