- 4 large starchy potatoes
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons all-purpose flour
- 1 egg
- Salt and pepper to taste
- Oil for greasing
- Chopped chives or green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C). Grease a muffin tin with oil to prevent sticking.
- Peel and coarsely grate the potatoes into a mixing bowl.
- Add the flour, egg, salt, and pepper to the grated potatoes and stir until well combined.
- Take a handful of the mixture and press it into the greased muffin tin, shaping it into nests.
- Bake for 20 to 25 minutes until golden brown and crispy.
- Remove from the oven and sprinkle cheese into the hollow centers of each nest.
- Return to the oven for a few more minutes until the cheese melts.
- Garnish with chives or green onions and serve warm.
