Description

Ingredients

  • 1 cup peanut butter
  • 1 cup coconut milk
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons lime juice
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Chopped green onions and peanuts for garnish

Instructions

  1. Place the chicken breasts at the bottom of the crockpot, ensuring they are evenly spread out.
  2. Combine peanut butter, coconut milk, soy sauce, honey, lime juice, minced garlic, minced ginger, and red pepper flakes in a bowl. Stir until smooth.
  3. Pour the peanut sauce over the chicken breasts in the crockpot, making sure they are well-coated.
  4. Cover the crockpot and cook on low for 360-420 minutes or on high for 180-240 minutes, until the chicken is cooked through and tender.
  5. Shred the chicken in the sauce using two forks, mixing it well to absorb the flavors. Season with salt and pepper to taste.
  6. Serve the shredded chicken over rice, garnished with chopped green onions and peanuts.

Notes

For a vegetarian option, replace the chicken with tofu. Adjust seasoning based on personal preference.
