A rich and creamy dark chocolate mousse that is perfect for any occasion, topped with whipped cream and fresh berries.
Ingredients

- 200g dark chocolate
- 3 large eggs, separated
- 1/4 cup sugar
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- Fresh berries (for garnish)
Instructions
- Melt the dark chocolate in a heatproof bowl over a pot of simmering water, stirring gently until smooth. Remove from heat and let cool slightly.
- In another bowl, beat the egg yolks with the sugar until pale and creamy. Stir the melted chocolate into the egg yolk mixture until well combined.
- Whip the egg whites until stiff peaks form, then gently fold them into the chocolate mixture to maintain airiness.
- In a separate bowl, whip the heavy cream with the vanilla extract until soft peaks form, then fold this into the chocolate-egg mixture.
- Spoon the mousse into serving dishes, cover with plastic wrap, and refrigerate for at least 2 hours until set.
- Serve topped with a dollop of whipped cream and fresh berries.
Notes
This mousse can be made a day in advance and stored in the refrigerator. It stays fresh for up to 3 days.
