- 200g pasta of choice
- 2 cups fresh spinach
- 2 cups cherry tomatoes, halved
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions until desired tenderness. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in halved cherry tomatoes and sauté for about 3-4 minutes until softened.
- Add fresh spinach and stir until it wilts, about 1-2 minutes.
- Toss the drained pasta with the sautéed vegetables.
- Season with salt and pepper to taste.
- Serve hot with grated Parmesan cheese on top.
Notes
Feel free to customize with different pasta shapes or additional vegetables. This dish can be stored in the fridge for up to 3 days or frozen for 2 months.
