Description

A colorful, no-bake cheesecake that is fun to make and perfect for celebrations.


Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 (8 oz) package cream cheese, room temperature
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 cup whipped cream
  • Gel food colors (pink, teal, lavender)
  • Edible glitter or pastel sprinkles (for topping)

Instructions

  1. Prepare the crust by mixing crumbs with melted butter and a small pinch of salt. Press firmly into the bottom of a springform pan. Chill while preparing the filling.
  2. In a mixing bowl, beat cream cheese until creamy. Gradually add powdered sugar, vanilla extract, and lemon juice, scraping the bowl often.
  3. Gently fold in whipped cream until light and airy.
  4. Divide the filling into small bowls and add gel food colors to each. Stir just to combine.
  5. Spoon the colored filling into the crust in scoops, then drag a skewer lightly through to create a marble effect. Smooth the top.
  6. Cover and chill for at least 6 hours, preferably overnight, to set.
  7. Before serving, top with edible glitter or sprinkles.
  8. For clean slices, dip a knife in hot water, wipe dry, then slice. Wipe between cuts for best results.

Notes

Can be made up to 2 days ahead. If it’s hot, consider adding gelatin to stabilize the filling.
