A colorful, no-bake cheesecake that is fun to make and perfect for celebrations.
Ingredients

- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 (8 oz) package cream cheese, room temperature
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 1 cup whipped cream
- Gel food colors (pink, teal, lavender)
- Edible glitter or pastel sprinkles (for topping)
Instructions
- Prepare the crust by mixing crumbs with melted butter and a small pinch of salt. Press firmly into the bottom of a springform pan. Chill while preparing the filling.
- In a mixing bowl, beat cream cheese until creamy. Gradually add powdered sugar, vanilla extract, and lemon juice, scraping the bowl often.
- Gently fold in whipped cream until light and airy.
- Divide the filling into small bowls and add gel food colors to each. Stir just to combine.
- Spoon the colored filling into the crust in scoops, then drag a skewer lightly through to create a marble effect. Smooth the top.
- Cover and chill for at least 6 hours, preferably overnight, to set.
- Before serving, top with edible glitter or sprinkles.
- For clean slices, dip a knife in hot water, wipe dry, then slice. Wipe between cuts for best results.
Notes
Can be made up to 2 days ahead. If it’s hot, consider adding gelatin to stabilize the filling.
