- 4 chicken breasts
- 1 cup tzatziki sauce
- 1 cup rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the rice and chicken broth in a baking dish.
- Place the chicken breasts on top of the rice mixture.
- Season the chicken with salt and pepper.
- Pour tzatziki sauce over the chicken to cover it.
- Drizzle olive oil over everything.
- Cover the baking dish tightly with foil and bake for 30-35 minutes.
- Remove the foil and bake uncovered for an additional 10 minutes.
- Garnish with chopped parsley before serving.
Notes
Can replace tzatziki with Greek yogurt, use quinoa for a gluten-free option, or substitute chicken broth with vegetarian broth.
