- 8 oz pasta
- 2 chicken breasts, diced
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 cup chicken broth
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Cook the pasta by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Once cooked, drain and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Brown the diced chicken breasts in the skillet until cooked through, about 6-8 minutes.
- Add the minced garlic and sauté for about 1 minute.
- Pour in the chicken broth and let it simmer.
- Combine the cooked pasta with the chicken and broth, then stir in the grated Parmesan cheese until melted.
- Season with salt and pepper, then garnish with chopped parsley before serving.
Notes
For a vegetarian version, substitute chicken with vegetables and use vegetable broth.
