Ingredients

- 1 pound ground turkey
- 2 medium zucchinis, sliced
- 1 cup diced tomatoes
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, warm the olive oil over medium heat. Sauté chopped onion and minced garlic for 3-4 minutes until translucent.
- Add ground turkey to the skillet and cook until no longer pink, about 5 minutes.
- Stir in sliced zucchini, diced tomatoes, Italian seasoning, salt, and pepper. Cook for 5-7 minutes until zucchini is tender.
- Transfer mixture to a casserole dish and top with cheese, if using.
- Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
- Remove from oven and let cool slightly before serving.
Notes
This casserole is perfect for leftovers and can be stored in the fridge for up to 3 days. It can also be frozen for later enjoyment.
