Description

A comforting casserole featuring ground turkey and zucchini, perfect for family gatherings or cozy nights at home.


Ingredients

  • 1 pound ground turkey
  • 2 medium zucchinis, sliced
  • 1 cup diced tomatoes
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, warm the olive oil over medium heat. Sauté chopped onion and minced garlic for 3-4 minutes until translucent.
  3. Add ground turkey to the skillet and cook until no longer pink, about 5 minutes.
  4. Stir in sliced zucchini, diced tomatoes, Italian seasoning, salt, and pepper. Cook for 5-7 minutes until zucchini is tender.
  5. Transfer mixture to a casserole dish and top with cheese, if using.
  6. Bake in preheated oven for 20-25 minutes, or until cheese is melted and bubbly.
  7. Remove from oven and let cool slightly before serving.

Notes
