Ingredients

- 2 pounds beef stew meat, cut into 1-inch cubes
- 4 large carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Place the beef stew meat at the bottom of your crockpot.
- Layer in the sliced carrots, diced potatoes, chopped onion, and minced garlic over the beef.
- In a bowl, combine the beef broth, tomato paste, dried thyme, bay leaf, salt, and pepper.
- Pour the broth mixture evenly over the ingredients in the crockpot.
- Cover and cook on low for 8 hours, or high for 4 hours.
- Remove the bay leaf before serving and gently stir the stew.
