Description

A comforting and hearty beef stew, perfect for chilly evenings, packed with tender beef and vegetables.


Ingredients

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 4 large carrots, sliced
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Place the beef stew meat at the bottom of your crockpot.
  2. Layer in the sliced carrots, diced potatoes, chopped onion, and minced garlic over the beef.
  3. In a bowl, combine the beef broth, tomato paste, dried thyme, bay leaf, salt, and pepper.
  4. Pour the broth mixture evenly over the ingredients in the crockpot.
  5. Cover and cook on low for 8 hours, or high for 4 hours.
  6. Remove the bay leaf before serving and gently stir the stew.
