- 2–3 lbs beef roast
- 4 tablespoons unsalted butter, softened
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
- Olive oil (for searing)
- 1 cup beef broth (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Mix together the softened butter, minced garlic, rosemary, thyme, salt, and pepper.
- Rub the herb butter all over the beef roast.
- Sear the roast in a skillet with olive oil until browned, about 4-5 minutes per side.
- Transfer the roast to a roasting pan and pour beef broth around it if using.
- Roast in the oven for about 1 hour, checking the internal temperature.
- Let the roast rest for 15-20 minutes before slicing.
Notes
Choose cuts like ribeye, sirloin, or chuck for the best results. Allow the roast to come to room temperature for even cooking.
