Description

Ingredients

  • 23 lbs beef roast
  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and pepper to taste
  • Olive oil (for searing)
  • 1 cup beef broth (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together the softened butter, minced garlic, rosemary, thyme, salt, and pepper.
  3. Rub the herb butter all over the beef roast.
  4. Sear the roast in a skillet with olive oil until browned, about 4-5 minutes per side.
  5. Transfer the roast to a roasting pan and pour beef broth around it if using.
  6. Roast in the oven for about 1 hour, checking the internal temperature.
  7. Let the roast rest for 15-20 minutes before slicing.
