- 1 lb chicken breast, cooked and diced
- 2 cups cooked brown rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, diced
- 1 cup bell peppers, diced
- 1/2 cup Kalamata olives, sliced
- Feta cheese, crumbled
- Fresh parsley, chopped
- Salt and pepper to taste
- 2 cups Greek yogurt
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt to taste
Instructions
- In a bowl, combine the cooked chicken, your choice of brown rice or quinoa, cherry tomatoes, diced cucumber, red onion, bell peppers, Kalamata olives, and fresh parsley. Mix well to combine all the flavors.
- In a separate bowl, mix together the Greek yogurt, minced garlic, olive oil, lemon juice, and a pinch of salt. Stir until well blended and creamy.
- Take your chicken and vegetable mixture and serve it in individual bowls. Ladle on a generous helping of tzatziki sauce. Then, sprinkle crumbled feta cheese on top.

Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Freeze chicken, vegetables, and tzatziki separately for about 3 months.
