Description

Ingredients

  • 2 chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 can artichoke hearts, drained and chopped
  • 1 cup cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant, about 30 seconds.
  3. Add chopped spinach and artichoke hearts, stirring until heated through, about 2-3 minutes.
  4. In a bowl, combine cottage cheese and mozzarella. Add the spinach-artichoke mix and stir.
  5. Season chicken breasts with salt and pepper and place in the greased baking dish.
  6. Spoon the cheese mixture over the chicken, covering it evenly.
  7. Bake in the oven for 25-30 minutes, until the chicken is cooked through and no longer pink inside.
  8. Let sit for a few minutes before serving warm.
