- 2 chicken breasts
- 1 cup fresh spinach, chopped
- 1 can artichoke hearts, drained and chopped
- 1 cup cottage cheese
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish with olive oil.
- In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant, about 30 seconds.
- Add chopped spinach and artichoke hearts, stirring until heated through, about 2-3 minutes.
- In a bowl, combine cottage cheese and mozzarella. Add the spinach-artichoke mix and stir.
- Season chicken breasts with salt and pepper and place in the greased baking dish.
- Spoon the cheese mixture over the chicken, covering it evenly.
- Bake in the oven for 25-30 minutes, until the chicken is cooked through and no longer pink inside.
- Let sit for a few minutes before serving warm.
