Description

Warm and hearty stuffed sweet potatoes filled with seasoned ground turkey, black beans, and corn, topped with diced avocado and Greek yogurt.


Ingredients

  • 4 medium sweet potatoes
  • 1 lb ground turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 avocado, diced
  • 1/2 cup Greek yogurt or sour cream
  • Chopped cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes and pierce them with a fork, then place them on a baking sheet.
  2. Bake sweet potatoes for 45-60 minutes until tender, checking doneness by inserting a fork.
  3. In a skillet over medium heat, cook the ground turkey for 7-10 minutes until browned, stirring occasionally.
  4. Add black beans, corn, taco seasoning, and salsa to the turkey, mixing well and heating through for 5-7 minutes.
  5. Remove baked sweet potatoes, let cool slightly, cut them in half lengthwise, and fluff the insides.
  6. Spoon the turkey mixture into each sweet potato half, topping with diced avocado, Greek yogurt, and chopped cilantro.

Notes

For a variation, try different toppings like cheese or add fresh lime juice for zest.
