Warm and hearty stuffed sweet potatoes filled with seasoned ground turkey, black beans, and corn, topped with diced avocado and Greek yogurt.

- 4 medium sweet potatoes
- 1 lb ground turkey
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 1 cup salsa
- 1 avocado, diced
- 1/2 cup Greek yogurt or sour cream
- Chopped cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C). Wash the sweet potatoes and pierce them with a fork, then place them on a baking sheet.
- Bake sweet potatoes for 45-60 minutes until tender, checking doneness by inserting a fork.
- In a skillet over medium heat, cook the ground turkey for 7-10 minutes until browned, stirring occasionally.
- Add black beans, corn, taco seasoning, and salsa to the turkey, mixing well and heating through for 5-7 minutes.
- Remove baked sweet potatoes, let cool slightly, cut them in half lengthwise, and fluff the insides.
- Spoon the turkey mixture into each sweet potato half, topping with diced avocado, Greek yogurt, and chopped cilantro.
Notes
For a variation, try different toppings like cheese or add fresh lime juice for zest.
