Ingredients

- 1 lb beef stew meat, cut into cubes
- 4 cups beef broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup potatoes, diced
- 1 cup green beans, chopped
- 1 can diced tomatoes (14.5 oz)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the beef cubes and brown them on all sides, about 5-7 minutes.
- Sauté the chopped onion and minced garlic until softened, about 3-4 minutes.
- Stir in diced carrots, celery, and potatoes, cooking for an additional 3-4 minutes.
- Pour in the beef broth and mix well. Add the green beans, diced tomatoes, thyme, salt, and pepper.
- Bring the soup to a boil, then reduce the heat to low and let it simmer for about 90 minutes.
- Taste and adjust seasoning if necessary before serving.
