Description

A comforting and nourishing beef soup packed with vegetables, perfect for chilly days.


Ingredients

  • 1 lb beef stew meat, cut into cubes
  • 4 cups beef broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup potatoes, diced
  • 1 cup green beans, chopped
  • 1 can diced tomatoes (14.5 oz)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the beef cubes and brown them on all sides, about 5-7 minutes.
  3. Sauté the chopped onion and minced garlic until softened, about 3-4 minutes.
  4. Stir in diced carrots, celery, and potatoes, cooking for an additional 3-4 minutes.
  5. Pour in the beef broth and mix well. Add the green beans, diced tomatoes, thyme, salt, and pepper.
  6. Bring the soup to a boil, then reduce the heat to low and let it simmer for about 90 minutes.
  7. Taste and adjust seasoning if necessary before serving.
