Ingredients

- 1 leg of lamb
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- Salt and pepper to taste
- 1/2 cup breadcrumbs
Instructions
- Preheat the oven to 400°F (200°C).
- Create the herb mixture by mixing olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper in a small bowl.
- Rub the herb mixture generously all over the leg of lamb.
- Press the breadcrumbs onto the herb-covered lamb.
- Place the lamb in a roasting pan and roast for about 1 to 1.5 hours, until the internal temperature reaches 145°F (63°C) for medium-rare.
- Rest for 10-15 minutes before slicing.
Notes
For added flavor, consider mixing in crushed red pepper flakes or a hint of mustard in the herb mixture.
