Description

A creamy, comforting Keto dish with chicken, spinach, and sun-dried tomatoes, perfect for family dinners and potlucks.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken, seasoning with salt and pepper, and cook for 6-7 minutes on each side.
  2. Remove chicken from the skillet and set aside to rest.
  3. Sauté minced garlic in the same skillet for about 1 minute.
  4. Pour in heavy cream, followed by Italian seasoning, sun-dried tomatoes, and spinach. Stir well and let simmer for 5 minutes.
  5. Return the cooked chicken to the skillet and coat with the sauce. Cook for an additional 2-3 minutes to absorb flavors.
  6. Serve hot, garnished with Parmesan cheese.
