Description

A warm, creamy casserole that combines shredded chicken, rice, and mixed vegetables for a comforting dinner.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup white rice, uncooked
  • 1 can cream of chicken soup
  • 1 can chicken broth
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a mixing bowl, combine shredded chicken, uncooked rice, cream of chicken soup, chicken broth, and mixed vegetables.
  3. Add salt and pepper to taste.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Cover with aluminum foil and bake for 45 minutes.
  6. If using cheese, remove the foil, sprinkle cheese on top, and bake for an additional 15-20 minutes until bubbly.
  7. Let sit for a few minutes before serving.

Notes

This casserole can be made ahead of time and stored in the fridge. It freezes well for future meals.
