- 2 cups cooked chicken, shredded
- 1 cup white rice, uncooked
- 1 can cream of chicken soup
- 1 can chicken broth
- 1 cup frozen mixed vegetables
- 1 cup shredded cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a mixing bowl, combine shredded chicken, uncooked rice, cream of chicken soup, chicken broth, and mixed vegetables.
- Add salt and pepper to taste.
- Pour the mixture into the prepared baking dish and spread evenly.
- Cover with aluminum foil and bake for 45 minutes.
- If using cheese, remove the foil, sprinkle cheese on top, and bake for an additional 15-20 minutes until bubbly.
- Let sit for a few minutes before serving.
Notes
This casserole can be made ahead of time and stored in the fridge. It freezes well for future meals.
