Scale
  • 1 cup rice
  • 1 lb boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp paprika
  • 2 cloves garlic, minced
  • 1 tsp honey
  • Salt, to taste
  • 2 cups corn kernels (fresh or frozen)
  • 1/2 cup Greek yogurt or sour cream
  • 1 tbsp mayonnaise
  • 1/2 tsp garlic powder

Instructions

  1. Cook the rice according to package directions, fluff with a fork, and stir in lime juice and salt.

  6. Assemble bowls with rice, chicken, corn, and crema, finishing with toppings and extra lime juice.
  7. Serve immediately and enjoy!
