- 2 chicken breasts
- 8 oz pasta (penne or fettuccine)
- 1 cup sun-dried tomatoes (in oil, drained and chopped)
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 2 cloves garlic (minced)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
- Olive oil
Instructions
- Cook the pasta according to the package instructions. Once it’s al dente, drain and set aside.
- In a large skillet, heat a drizzle of olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes per side, or until the chicken is golden-brown and cooked through. Remove the chicken from the skillet and let it rest.
- In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Sauté them together for 1-2 minutes until the garlic is fragrant.
- Pour in the chicken broth and heavy cream to the skillet. Bring the mixture to a gentle simmer, then stir in the grated Parmesan cheese and Italian seasoning. Mix until well combined and the cheese has melted.
- Add the drained pasta to the skillet, tossing to coat it thoroughly in the creamy sauce. Slice the rested chicken and place it atop the pasta.
- Finish your dish by garnishing with fresh basil before serving. Enjoy your comforting meal!
