Description

A comforting and flavorful dish of turkey koftas served over rice or quinoa, garnished with fresh vegetables and a creamy sauce.


Ingredients

  • 1 pound ground turkey
  • 1/4 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil for cooking
  • Cooked rice or quinoa for serving
  • Sliced cucumbers, tomatoes, and red onion for garnish
  • Tahini or yogurt sauce for drizzling

Instructions

  1. Mix the ground turkey, breadcrumbs, finely chopped onion, minced garlic, chopped parsley, ground cumin, paprika, salt, and pepper in a bowl until combined.
  2. Shape the mixture into small oval-shaped kofta patties.
  3. Heat some olive oil in a skillet over medium heat.
  4. Cook the koftas for about 5-6 minutes on each side until browned and fully cooked.
  5. Prepare a bed of cooked rice or quinoa on each plate.
  6. Serve the koftas over the rice or quinoa, garnished with sliced cucumbers, tomatoes, red onion, and a drizzle of tahini or yogurt sauce.
