- 1 pound ground turkey
- 1/4 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil for cooking
- Cooked rice or quinoa for serving
- Sliced cucumbers, tomatoes, and red onion for garnish

Instructions
- Mix the ground turkey, breadcrumbs, finely chopped onion, minced garlic, chopped parsley, ground cumin, paprika, salt, and pepper in a bowl until combined.
- Shape the mixture into small oval-shaped kofta patties.
- Heat some olive oil in a skillet over medium heat.
- Cook the koftas for about 5-6 minutes on each side until browned and fully cooked.
- Prepare a bed of cooked rice or quinoa on each plate.
- Serve the koftas over the rice or quinoa, garnished with sliced cucumbers, tomatoes, red onion, and a drizzle of tahini or yogurt sauce.
