Ingredients

  • 1 cup rolled oats
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/4 cup honey or maple syrup
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup poppy seeds
  • 1/4 cup almond butter or peanut butter
  • A pinch of salt

Instructions

  1. In a large bowl, mix together rolled oats, protein powder, and a pinch of salt until evenly combined.
  2. In another bowl, combine honey or maple syrup, lemon juice, lemon zest, and almond or peanut butter. Whisk until smooth.
  3. Pour the wet mixture into the dry ingredients, add poppy seeds, and stir until a sticky mixture forms.
  4. Roll the mixture into balls about 1 inch in diameter and place on a parchment-lined baking sheet.
  5. Cover with plastic wrap and refrigerate for at least 30 minutes to firm up.
