Description

A heartwarming and creamy potato soup that brings nostalgia with every spoonful. Perfect for cozy nights and family gatherings.

Ingredients

Scale
  • 6 medium potatoes, diced
  • 1 onion, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup milk
  • 1/4 cup butter
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish

Instructions

  1. Melt the butter in a large pot over medium heat. Add the onion and sauté until translucent, about 3-4 minutes.
  2. Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  3. Mash some of the potatoes with a potato masher to create a creamy texture, while leaving chunks for heartiness.
  4. Stir in the milk and season with salt and pepper. Cook for an additional 5 minutes.
  5. Serve hot, garnished with chopped chives or parsley. Enjoy!

Notes

For a creamy finish, avoid adding milk too early. Substitute ingredients as needed to fit dietary preferences.
