Instructions
- Melt the butter in a large pot over medium heat. Add the onion and sauté until translucent, about 3-4 minutes.
- Add the diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Mash some of the potatoes with a potato masher to create a creamy texture, while leaving chunks for heartiness.
- Stir in the milk and season with salt and pepper. Cook for an additional 5 minutes.
