- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 cup mixed vegetables (frozen or fresh)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, season the chicken with salt and pepper. Add the chicken to the skillet and sear it for about 5 minutes on each side until nicely browned.
- In a small bowl, whisk together the BBQ sauce and honey until well combined. Pour this mixture over the seared chicken in the skillet, ensuring it’s evenly coated.
- Stir in the long-grain rice and chicken broth, mixing everything together thoroughly.
- Bring the mixture to a gentle simmer, then cover the skillet with a lid. Lower the heat and let it cook for about 20 minutes, or until the rice is tender and has absorbed the broth.
- During the last 5 minutes of cooking, place the mixed vegetables on top of the rice mixture to steam them while finishing the dish.
- Remove from heat and let sit for about 5 minutes, then fluff the rice with a fork, mixing in the vegetables and chicken. It’s now ready to serve!
Notes
Use skinless chicken thighs for a juicier flavor and adjust the ingredients according to your dietary needs.
