Description

A comforting, quick meal featuring tender chicken, sweet honey, tangy BBQ sauce, and fluffy rice, perfect for busy weeknights.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large skillet over medium heat, season the chicken with salt and pepper. Add the chicken to the skillet and sear it for about 5 minutes on each side until nicely browned.
  2. In a small bowl, whisk together the BBQ sauce and honey until well combined. Pour this mixture over the seared chicken in the skillet, ensuring it’s evenly coated.
  3. Stir in the long-grain rice and chicken broth, mixing everything together thoroughly.
  4. Bring the mixture to a gentle simmer, then cover the skillet with a lid. Lower the heat and let it cook for about 20 minutes, or until the rice is tender and has absorbed the broth.
  5. During the last 5 minutes of cooking, place the mixed vegetables on top of the rice mixture to steam them while finishing the dish.
  6. Remove from heat and let sit for about 5 minutes, then fluff the rice with a fork, mixing in the vegetables and chicken. It’s now ready to serve!

Notes

Use skinless chicken thighs for a juicier flavor and adjust the ingredients according to your dietary needs.
