Description

A cozy one-pot meal featuring tender chicken thighs, caramelized onions, hearty rice, and melted cheese, perfect for family dinners.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 large onion, sliced
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (Gruyère or Swiss)
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Season the chicken thighs with salt, pepper, and garlic powder. Add them to the pot, browning on both sides for about 3 to 4 minutes per side.
  3. Remove the chicken and set aside. Add the sliced onions to the pot and cook for about 10 minutes until caramelized.
  4. Stir in the long-grain rice, cooking for an additional minute.
  5. Pour in the chicken broth and bring to a simmer. Return the browned chicken to the pot.
  6. Cover and reduce heat to low. Cook for 20 to 25 minutes until rice is tender and chicken is cooked through.
  7. Remove from heat and sprinkle the cheese on top. Cover again and let melt for a couple of minutes.
  8. Garnish with fresh parsley before serving hot.
