- 4 boneless, skinless chicken thighs
- 1 large onion, sliced
- 2 cups long-grain rice
- 4 cups chicken broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheese (Gruyère or Swiss)
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Season the chicken thighs with salt, pepper, and garlic powder. Add them to the pot, browning on both sides for about 3 to 4 minutes per side.
- Remove the chicken and set aside. Add the sliced onions to the pot and cook for about 10 minutes until caramelized.
- Stir in the long-grain rice, cooking for an additional minute.
- Pour in the chicken broth and bring to a simmer. Return the browned chicken to the pot.
- Cover and reduce heat to low. Cook for 20 to 25 minutes until rice is tender and chicken is cooked through.
- Remove from heat and sprinkle the cheese on top. Cover again and let melt for a couple of minutes.
- Garnish with fresh parsley before serving hot.
