- 1 cup French onion soup

Instructions
- Brown the chicken: Heat oil in a large pot over medium heat. Add chicken thighs, season with salt and pepper, and cook until browned, about 5-7 minutes. Remove and set aside.
- Caramelize the onions: In the same pot, add sliced onions and cook until golden brown and fragrant, about 10 minutes. Stir in minced garlic for another minute.
- Toast the rice: Stir in the rice and cook for 2 minutes to toast slightly.
- Add the broth and soup: Pour in chicken broth and French onion soup, along with thyme. Increase heat to bring to a boil, stirring occasionally.
- Simmer the dish: Return the browned chicken to the pot. Cover and reduce heat to low. Let simmer for about 20-25 minutes until rice is tender and chicken is cooked through.
- Stir in cheese: Remove pot from heat and stir in shredded cheese, allowing it to melt into the dish.
