- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup Swiss cheese, shredded
- Salt and pepper to taste
- Fresh thyme for garnish (optional)
Instructions
- Heat the skillet by heating two tablespoons of olive oil and one tablespoon of butter in a large skillet over medium heat.
- Sear the chicken breasts seasoned with salt and pepper until golden brown on both sides, about 5-7 minutes per side.
- Caramelize the onions in the same skillet, cooking them over medium heat until golden brown, about 10-15 minutes, then stir in minced garlic for an additional minute.
- Add one cup of beef broth, bringing it to a gentle simmer.
- Return the seared chicken to the skillet, cover, and cook gently for about 10 minutes.
- Melt the cheese over the chicken during the last few minutes of cooking.
- Garnish with fresh thyme if desired, and serve warm.
Notes
Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat on the stovetop or in the microwave.
