Description

A comforting dish featuring tender chicken breasts, caramelized onions, and melted Swiss cheese, all cooked in one skillet.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup Swiss cheese, shredded
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions

  1. Heat the skillet by heating two tablespoons of olive oil and one tablespoon of butter in a large skillet over medium heat.
  2. Sear the chicken breasts seasoned with salt and pepper until golden brown on both sides, about 5-7 minutes per side.
  3. Caramelize the onions in the same skillet, cooking them over medium heat until golden brown, about 10-15 minutes, then stir in minced garlic for an additional minute.
  4. Add one cup of beef broth, bringing it to a gentle simmer.
  5. Return the seared chicken to the skillet, cover, and cook gently for about 10 minutes.
  6. Melt the cheese over the chicken during the last few minutes of cooking.
  7. Garnish with fresh thyme if desired, and serve warm.

Notes

Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat on the stovetop or in the microwave.
