- 8 oz wide Lo Mein noodles, cooked and rinsed
- 1 tablespoon peanut oil
- 1 pound ground pork
- 1/4 cup + 2 tablespoons sliced green onions
- 1/2 cup low-sodium chicken broth
- 3 tablespoons mirin
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha
- 4 cups coleslaw mix
Instructions
- Cook the Noodles: Bring a large pot of salted water to a boil. Add the wide Lo Mein noodles and cook according to the package instructions until tender. Drain and rinse them under cold water. Set aside.
- Prepare the Pork: In a large skillet, heat the peanut oil over medium heat. Add the ground pork and cook, breaking it apart with a spatula, until browned, about 5-7 minutes. Toss in the 1/4 cup of sliced green onions during the last minute to soften them slightly.
- Whisk the Sauce: In a small bowl, combine the chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha. Whisk until well blended.
- Combine Noodles and Veggies: Add the cooked noodles and coleslaw mix to the skillet with the pork and onions. Pour the sauce over everything and toss gently for 2-3 minutes until well coated.
- Garnish and Serve: Remove from heat and garnish with the remaining sliced green onions. Serve immediately and enjoy.
