Description

Comforting and creamy Roasted Red Pepper Fettuccine made with roasted red peppers, garlic, and parmesan, perfect for family dinners.


Ingredients

  • 8 oz Fettuccine pasta
  • 1 cup Roasted red peppers
  • 2 cloves Garlic
  • 2 tbsp Olive oil
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese, grated
  • Salt, to taste
  • Pepper, to taste
  • Fresh basil, for garnish

Instructions

  1. Cook the fettuccine pasta according to the package instructions in salted water. Drain and set aside.
  2. Blend the roasted red peppers, garlic, and olive oil in a blender until smooth.
  3. Prepare the sauce in a skillet over medium heat, adding the blended mixture. Bring to a gentle simmer and stir in the heavy cream.
  4. Combine the cooked fettuccine with the sauce until well coated.
  5. Finish with grated parmesan cheese, stirring to melt, and season with salt and pepper.
  6. Serve in bowls, garnished with fresh basil.
