Description

A quick and healthy one-pan meal featuring tender chicken, colorful vegetables, and a zesty spice mix, perfect for weeknight dinners or gatherings.


Ingredients

  • 1 lb Chicken breast
  • 2 Bell peppers
  • 1 Onion
  • 2 tbsp Olive oil
  • 2 tsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Garlic powder
  • Salt to taste
  • Pepper to taste
  • 2 cups Rice
  • 1 Lime
  • 1/4 cup Cilantro

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a sheet pan lined with parchment paper.
  2. Cut the chicken breast, bell peppers, and onion into bite-sized pieces.
  3. Mix the olive oil, chili powder, cumin, garlic powder, salt, and pepper in a medium bowl.
  4. Toss the chicken pieces and chopped vegetables with the spice mixture until coated.
  5. Spread the mixture on the prepared sheet pan in a single layer.
  6. Bake for about 20-25 minutes until the chicken is cooked through and the vegetables are caramelized.
  7. Serve over cooked rice, garnished with lime juice and fresh cilantro.
