- 2 Bell peppers
- 1 Onion
- 2 tbsp Olive oil
- 2 tsp Chili powder
- 1 tsp Cumin
- 1 tsp Garlic powder
- Salt to taste
- Pepper to taste
- 2 cups Rice
- 1 Lime
- 1/4 cup Cilantro
Instructions
- Preheat your oven to 425°F (220°C) and prepare a sheet pan lined with parchment paper.
- Cut the chicken breast, bell peppers, and onion into bite-sized pieces.
- Mix the olive oil, chili powder, cumin, garlic powder, salt, and pepper in a medium bowl.
- Toss the chicken pieces and chopped vegetables with the spice mixture until coated.
- Spread the mixture on the prepared sheet pan in a single layer.
- Bake for about 20-25 minutes until the chicken is cooked through and the vegetables are caramelized.
- Serve over cooked rice, garnished with lime juice and fresh cilantro.
