Description

A simple and comforting dish featuring delightful gnocchi paired with cherry tomatoes, asparagus, and bell peppers, drizzled with olive oil and seasoned to perfection.


Ingredients

  • 1 lb gnocchi
  • 1 cup cherry tomatoes, halved
  • 1 cup asparagus, cut into pieces
  • 1 cup bell peppers, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the gnocchi, cherry tomatoes, asparagus, and bell peppers on a large sheet pan.
  3. Drizzle with olive oil and season generously with salt, pepper, and garlic powder.
  4. Toss everything together until well coated.
  5. Spread out the mixture in an even layer on the sheet pan.
  6. Roast in the oven for 20-25 minutes, stirring halfway through, until the vegetables are tender and the gnocchi are golden brown.
