Description

A delightful and easy sheet pan recipe featuring halibut fillets adorned with a lemon herb mixture, served with cherry tomatoes and asparagus.


Ingredients

  • 4 halibut fillets
  • 2 tablespoons olive oil
  • 2 lemons (zested and juiced)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup cherry tomatoes (halved)
  • 1 cup asparagus (trimmed)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a sheet pan with parchment paper or grease it.
  2. Combine olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper in a bowl to make the lemon herb mixture.
  3. Place halibut fillets on the prepared sheet pan and brush with the lemon herb mixture.
  4. Arrange halved cherry tomatoes and asparagus around the halibut on the pan.
  5. Drizzle any remaining lemon herb mixture over the vegetables.
  6. Bake in the oven for 15-20 minutes until halibut is opaque and flakes easily.
