- 4 halibut fillets
- 2 tablespoons olive oil
- 2 lemons (zested and juiced)
- 2 cloves garlic (minced)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup cherry tomatoes (halved)
- 1 cup asparagus (trimmed)
Instructions
- Preheat your oven to 400°F (200°C) and prepare a sheet pan with parchment paper or grease it.
- Combine olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper in a bowl to make the lemon herb mixture.
- Place halibut fillets on the prepared sheet pan and brush with the lemon herb mixture.
- Arrange halved cherry tomatoes and asparagus around the halibut on the pan.
- Drizzle any remaining lemon herb mixture over the vegetables.
- Bake in the oven for 15-20 minutes until halibut is opaque and flakes easily.
- Serve warm and enjoy your meal!
Notes
For a touch of spice, sprinkle red pepper flakes before baking. Store leftovers in the refrigerator for up to 2-3 days.
