- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 4 carrots, sliced
- 4 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Brown the beef: Heat the olive oil in a skillet over medium-high heat. Add the beef chuck and brown the cubes on all sides. Once browned, transfer the beef to your slow cooker.
- Add the vegetables: In the slow cooker, add the chopped onion, minced garlic, sliced carrots, and diced potatoes.
- Season and add broth: Stir in the beef broth, tomato paste, dried thyme, dried rosemary, and season with salt and pepper.
- Cook it: Cover the slow cooker and set to cook on low for 7-8 hours or on high for 4-5 hours.
- Taste and adjust: When the cooking time is up, taste the stew and adjust the seasonings if necessary.
- Serve warm: Scoop the stew into bowls and serve hot, ideally with crusty bread.
Notes
For a lighter version, substitute beef chuck with chicken thighs or use vegetable broth for a vegetarian option.
