Description

A comforting slow cooker beef stew with tender beef chuck, vibrant vegetables, and aromatic herbs, perfect for cozy nights.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Brown the beef: Heat the olive oil in a skillet over medium-high heat. Add the beef chuck and brown the cubes on all sides. Once browned, transfer the beef to your slow cooker.
  2. Add the vegetables: In the slow cooker, add the chopped onion, minced garlic, sliced carrots, and diced potatoes.
  3. Season and add broth: Stir in the beef broth, tomato paste, dried thyme, dried rosemary, and season with salt and pepper.
  4. Cook it: Cover the slow cooker and set to cook on low for 7-8 hours or on high for 4-5 hours.
  5. Taste and adjust: When the cooking time is up, taste the stew and adjust the seasonings if necessary.
  6. Serve warm: Scoop the stew into bowls and serve hot, ideally with crusty bread.

Notes

For a lighter version, substitute beef chuck with chicken thighs or use vegetable broth for a vegetarian option.
