Description

A comforting dish of hot, cheesy enchiladas filled with ground beef and topped with delicious enchilada sauce and melted cheese.


Ingredients

  • 1 lb ground beef
  • 1 can (10 oz) enchilada sauce
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1 onion, chopped
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Sour cream and cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat, stirring occasionally to break up any clumps.
  3. Sauté the chopped onion in the skillet until translucent, then stir in garlic powder, chili powder, salt, and pepper.
  4. Assemble the enchiladas by spreading a little enchilada sauce on the bottom of a baking dish, dipping each tortilla in sauce, filling with beef mixture and cheese, and rolling tightly.
  5. Pour the remaining enchilada sauce over the rolled enchiladas and sprinkle with the rest of the cheese.
  6. Bake for 20 to 25 minutes until the cheese is bubbly and golden.
