- 1 lb ground beef
- 1 can (10 oz) enchilada sauce
- 1 cup shredded cheese
- 8 corn tortillas
- 1 onion, chopped
- 1 tsp garlic powder
- 1 tsp chili powder
- Salt and pepper to taste
- Sour cream and cilantro for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Brown the ground beef in a skillet over medium heat, stirring occasionally to break up any clumps.
- Sauté the chopped onion in the skillet until translucent, then stir in garlic powder, chili powder, salt, and pepper.
- Assemble the enchiladas by spreading a little enchilada sauce on the bottom of a baking dish, dipping each tortilla in sauce, filling with beef mixture and cheese, and rolling tightly.
- Pour the remaining enchilada sauce over the rolled enchiladas and sprinkle with the rest of the cheese.
- Bake for 20 to 25 minutes until the cheese is bubbly and golden.
