- 1 cup fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1 clove garlic, minced
- Salt and pepper to taste
- Olive oil
- 1 teaspoon Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C). Gather all ingredients.
- In a bowl, combine spinach, ricotta, mozzarella, garlic, salt, pepper, and Italian seasoning. Mix well.
- Carefully cut pockets into each chicken breast, ensuring not to slice all the way through.
- Spoon the filling into each chicken pocket and secure openings with toothpicks.
- Heat olive oil in a skillet over medium heat and sear the stuffed breasts for 3-4 minutes on each side until golden brown.
- Transfer to a baking dish and bake for 20-25 minutes until cooked through.
- Allow to rest for 5 minutes before serving.
