Description

A comforting beef stew that warms the soul, filled with tender meat and wholesome vegetables, perfect for family gatherings.

Ingredients

Scale
  • 2 pounds beef stew meat
  • 4 cups beef broth
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Add the beef stew meat in batches, searing it until it turns a rich brown on all sides.
  2. Once browned, transfer the seared beef to a slow cooker.
  3. Pour in the beef broth and add the sliced carrots, diced potatoes, chopped onion, minced garlic, and tomato paste. Sprinkle in the dried thyme, salt, and black pepper.
  4. Gently stir the mixture to combine all ingredients evenly.
  5. Cover the slow cooker and set it to cook on low for 6 to 8 hours.
  6. Once the cooking time is complete, serve the stew hot.

Notes

For best results, avoid overcooking the beef to prevent it from becoming mushy. Adjust seasoning at the beginning for better flavor integration.
