Instructions
- In a large skillet, heat the olive oil over medium-high heat. Add the beef stew meat in batches, searing it until it turns a rich brown on all sides.
- Once browned, transfer the seared beef to a slow cooker.
- Pour in the beef broth and add the sliced carrots, diced potatoes, chopped onion, minced garlic, and tomato paste. Sprinkle in the dried thyme, salt, and black pepper.
- Gently stir the mixture to combine all ingredients evenly.
- Cover the slow cooker and set it to cook on low for 6 to 8 hours.
- Once the cooking time is complete, serve the stew hot.
