- 24 ounces frozen shredded hash brown potatoes
- Salt and pepper to taste
- 12 large eggs
- 2 cups half and half
- 1 teaspoon seasoned salt
- 1 ½ cups shredded cheddar cheese
- 1 ½ cups shredded pepper jack cheese
- 2 cups chopped ham, sausage, bacon, or preferred meat
Instructions
- Preheat oven to 350°F (175°C) and grease a large baking dish.
- In a large bowl, whisk together eggs, half and half, seasoned salt, and a pinch of salt and pepper.
- Layer the frozen hash brown potatoes evenly in the greased baking dish.
- Pour the egg mixture over the hash browns evenly.
- Add your choice of chopped ham, sausage, or bacon on top, then sprinkle with cheddar and pepper jack cheese.
- Bake in the oven for 45 minutes to 1 hour until golden brown and set in the center. Allow to cool slightly before slicing.
Notes
For a lighter version, substitute half and half with almond milk or a non-dairy creamer. Add veggies for extra nutrition.
