Description

A comforting breakfast casserole made with hash browns, eggs, cream, and cheese, perfect for family gatherings or cozy mornings.


Ingredients

  • 24 ounces frozen shredded hash brown potatoes
  • Salt and pepper to taste
  • 12 large eggs
  • 2 cups half and half
  • 1 teaspoon seasoned salt
  • 1 ½ cups shredded cheddar cheese
  • 1 ½ cups shredded pepper jack cheese
  • 2 cups chopped ham, sausage, bacon, or preferred meat

Instructions

  1. Preheat oven to 350°F (175°C) and grease a large baking dish.
  2. In a large bowl, whisk together eggs, half and half, seasoned salt, and a pinch of salt and pepper.
  3. Layer the frozen hash brown potatoes evenly in the greased baking dish.
  4. Pour the egg mixture over the hash browns evenly.
  5. Add your choice of chopped ham, sausage, or bacon on top, then sprinkle with cheddar and pepper jack cheese.
  6. Bake in the oven for 45 minutes to 1 hour until golden brown and set in the center. Allow to cool slightly before slicing.

Notes

For a lighter version, substitute half and half with almond milk or a non-dairy creamer. Add veggies for extra nutrition.
